This small doughnut-shaped goat's milk cheese is made in the medieval city of Loches in France's Loire Valley. It's shape "La Couronne" translates as "the crown". I was drawn to this, of course, for the shape and also the mossy feather-light dusty rind that looked so fun at the cheese shop. When I cut into it and found the pale yellow creamy goat cheese center, it was like christmas all over again.
